Indulgence By Irene Introduces Calamansi Cheesecake

The Cheesecake Queen of Manila.

After some research, no one seems to have that moniker as of this writing. So it may be best to give it to the lady behind Indulgence by Irene.

Time and time again, her cheesecake creations have constantly made it to the list of Manila’s best desserts. Starting with the Queso De Bola Cheesecake, and then that rich Tsokolate Tablea, and the current darling of the sweet toothed: The Ube Halaya Cheesecake.

So when we got word that there was this new Calamansi Cheesecake, we did not hesitate to give her a call and plunk in PHP 1,000.00 to get a large sized version (PHP 220.00 for a small one, as pictured here):

What else can be said? Another winner for sure in everyone’s books. This one will appeal to the more evolving palate of finding balance in every bite, where the thick, creamy, slightly sweet, semi-salty no-compromise cheesecake is now infused with freshly squeezed calamansi juice, and finished off with faint bitterness from calamansi rinds that pepper the insides of this baked beauty. It’s like that calamansi muffin from Real Coffee Boracay, but made thicker and fuller with cream cheese.

Mind you, the graham base will always be an essential to add that crunchy texture with every forkful of this indulgence (probably intentionally named given the “sorry not sorry” attitude you feel as you hound down this cake to the last bit).

And for recommended pairing, this one will go well with your choice of red wine, or elevate your after-dinner with this and some cognac. A Louis XIII, perhaps?
